It’s super bowl Sunday! I am routing for the Saints but I really don’t care who wins this year. I usually watch for the commercials anyway.
The only thing bad about Super Bowl Sunday is that the grocery store is packed! That said, we got some really great stuff this week that I thought I would share.
Here are the meats we bought: Tilapia fillets, chicken breasts (bone-in), ground turkey, ground bison and hot italian beef sausages. All fresh, never frozen and mostly wild caught or range.
Veggies and fruits (YUM!) – bananas, asparagus tips, pink lady apples, sweet potatoes, tomatoes on the vine, plums, onion, carrots, avocado and a gourmet tomato medley.
Staples/other – cereal, the best OJ in the world, ground flaxseed, hommus, PB, Acai sorbet and various energy bars for snacking at work.
So with all of this yummy food, what’s for dinner this week you ask?
Sunday – leftovers from dinner we cooked with my friend Kristine last week. We made one’s of Giada’s amazing sauceless pastas – recipe here.
Monday – Pistacio crusted tilapia with grilled asparagus
Tuesday - BBQ chicken breasts with roasted carrots (these carrots are to DIE for!)
Wednesday – Women’s Energy Network (WEN) Happy Hour at Sambuca and then leftovers
Thursday – Homemade burrito bowl – this is one of my favorite new things to make – we make brown rice with chicken, black beans, avocado, tomatoes, salsa, onions and cheese. Its just like Chipolte’s burrito bowls and is super yummy and very easy to make. You also control the portions so I can cook the chicken better (not so much salt) and eat less. We usually have a ton leftover for lunches.
Friday – girls wine night at friend’s house
Saturday – Valentine’s day dinner at our favorite french restaurant in Houston, Cafe Rabelais. We have a $100 GC to use. SCORE!
